Recipes

Chicken Chalupas

4 chicken breasts

1 can enchilada sauce

1 can diced green chiles

1 c. sour cream

1 can cream of chicken soup

1 can cream of mushroom soup

2-3 c. grated cheddar cheese

1 package flour tortillas (burrito size)

Preheat oven to 375 degrees. Boil and shred chicken breast. In a large bowl stir together enchilada sauce, chiles, sour cream, and soups. With a pizza cutter, cut tortillas into six pie shaped pieces. The trick to this recipe is “layers”. In a large round baking pot, start by pouring a few tablespoons of sauce in the bottom.

Next layer tortillas, then chicken, sauce and last cheese.

Repeat layers about 3 times. Bake for aprox. 35 minutes.

This recipe is a meal in itself. But also goes well with a mixed salad.

 

Chicken & Soup Casserole

3-4 chicken breasts

1 can cream of mushroom soup

1 can cream of chicken soup

1 can cream of broccoli soup

2 cups of water

2 cups instant rice

1 pkg. Lipton onion soup mix (powder)

3 Tbl. Butter (optional)

Preheat oven to 375 degrees. Mix soups, water and rice in large bowl. Pour into 9x13 baking dish. Cut uncooked chicken into strips and press lightly into top of soup mixture. Drizzle melted butter over chicken. Sprinkle Lipton soup mix over all. Bake 35 minutes or until chicken is fully cooked.

You can also make this recipe without chicken and use fresh broccoli and cauliflower instead.

Turkey chili

2lb. ground turkey

1 lrg. onion

2 cloves garlic

1 pkg chili powder

1 can 35oz. can chopped tomatoes

1 ½ c. water

1 can 15 ½ oz. red kidney beans

1 can 15 ½ oz. pinto beans

2 tsp. sugar (optional)

1 tsp. salt (optional)

shredded cheddar cheese

Brown turkey, onion and garlic in large pot. Drain. Stir in chili powder, tomatoes and water. Bring to a boil then reduce to low heat. Simmer 20 minutes. Stir in beans, sugar and salt. Cook until beans are heated through. Top with cheese.

You can also leave out the turkey and use Morningstar Farms, Grillers Recipe Crumbles.

 

Meatball Stroganoff

turkey meatballs (recipe follows)

2 cans cream of mushroom soup

1 pint sour cream

1pkg. egg noodle pasta (follow bag instructions)

Combine soup and sour cream. Simmer meatballs in soup mixture until heated through. Serve over cooked

egg noodle pasta. Do not allow to boil.

 

Turkey Meatballs

1 ½ pounds ground turkey

2 slices of wheat bread (ripped into small pieces)

2 eggs

¼ c. diced onion

Preheat oven 375 degrees. Combine all ingredients in large bowl, mix well. Roll small amount with your hands to form meatballs. Bake 15 to 20 minutes on cookie sheet or until cooked through. Turn frequently to keep from scorching.
